WHY DO SUB-ATMOSPHERIC SPIRITS
TASTE BETTER?
Sub-Atmospheric™ distillation involves drastically lowering the pressure inside our stills to enable distillation at 40% lower temperatures. This creates fresher flavours avoiding stewing the core ingredients. It’s similar to French sous vide (under vacuum) cooking.

It took years to overcome the technical difficulties
Our philosophy is simply to create outstanding traditional spirits using new world innovation and energy efficient technology. Ten years ago we cast our distilling and environmental eyes over the traditional distilling practices and saw the possibility of creating a more gentle process.

Gentler on the ingredients, by greatly reducing the distillation temperature. Gentler on the environment, by greatly reducing the energy consumption.
We spent years conducting lab trials covering every bit of available kitchen bench space with a weird array of glassware. Then hours of desk top modelling to gain the confidence and data to design and build the full scale Sub-Atmospheric™ plant.
In 2019 we finally cracked it!
We began making our unique Sub-Atmospheric™ spirits in the World’s First high-tech Williams Close Coupled Pot and Retort Vacuum stills, (affectionately named Fat Boy and Thumper).
