Traditional distilling consumes an enormous amount of energy and resources.
Our approach is to bring traditional processes into the 21st century and address environmental issues. Here’s some of what we do differently.

Our Environmental
initiatives
Solar Panels
Solar panels produce more power and hot water than we need for our process. In fact, we are energy net positive, feeding more energy into the grid than we consume.
Unique energy efficient vacuum stills
Our Sub-Atmospheric™ distillation equipment saves around 60% of energy compared to other distilleries by reducing boiling temperature in the vacuum.
Insulated Stills
Our Sub-Atmospheric™ stills are double jacketed and insulated in the outer layer, protecting the Bain Marie hot water jacket which provides gentle, well distributed heat for the distilling process.
Bio-filters
Fermenting odour control is achieved through an extensive biofilter in our tropical garden.
Heat pump
We are currently installing a heat pump which will recuperate heat from the process cooling system to greatly reduce overall energy. Watch this space!
Harvesting waste energy
By close coupling our stills we harvest ‘waste’ energy from our stripping still to totally run the spirit still.
Thermal Energy Storage
Solar energy heats our mass energy storage unit, creating all the energy to heat the stills. No boiler required!
Harvested rainforest rain water
Beautiful, fresh ancient rainwater is carefully harvested and stored in five tanks, then filtered and sterilised for our production.
No waste
Our by-product ‘dunder’ is collected and used by local farmers to create compost.
Nature covenant over our remaining land
Our property has a nature covenant protecting the surrounding native rainforest as a nature reserve and wildlife sanctuary to ensure it can never be developed beyond our small footprint.
Bunding to avoid spillage
Our entire building and tank areas are bunded to prevent any possibility of environmental damage.
Locally grown product
Locally sourced molasses and cane juice is used to create our base spirit. Many of our botanicals are sourced locally, reducing food miles. Locally grown cane does not require irrigation, we rely on natural rainfall.

LOcal
Small rural communities are the lifeblood of Australia. They produce the food we all need but are rarely acknowledged. We believe industries that support local growers not only ensure diversity for the farmers, but provide new opportunities for local jobs, tourism experiences and broader regional recognition.
